This is the general 1, 2, 3 idea. A nontick skillet with tight glass lid in the size that fits you is best. I have a 3qt for 1-4 servings that is kind of wok bottomed, and doesn't annoy me for fast cleaning up before I sit down for dinner. I can easily keep the transparent lid down if in doubt it needs more time.
One pot rice skillets can be arroz con pollo, cajun dirty rice or jambalya, mexican cilantro rice, latino or jamaican beans and rice of several types, or even orzo greek style, or curried couscous or olive and fruit studded couscous. Spiced basmati done as a pilaf or biryani, pairs with meats broiled in the oven.
