Is a flow profiling setup to get something similar to the Flair worth spending 2.5k+ for? Its really hard for me to recommend a $200cad hand grinder or baratza encore in that situation. I'd seriously consider shopping for a df64 and putting cheap(er than ssp) Lebrew burrs in when you can. You're just going to miss out on so much flavor with a muddy little high fines conical.

If you're willing to increase your budget, the DF54 is the cheapest automatic grinder I'd recommend for espresso at ~300 canux. Don't even consider the baratza encore, all around shit grinder. Same goes for the breville smart grinder, you'd be better off with a hand grinder and an electric drill.

Seconding Costco. Don't buy Kirkland or Starbucks, burnt to shit and stale. If you're concerned about freshness, check the expiry date and contact the manufacturer for how they calculate that. Some set their expiry 12 months after roast date, some 18 months after roast, and some even 24 months after roast. I've easily found beans within 2 weeks of their roast date using this method. It's not great coffee, but it's cheaper than comparable coffee from grocery stores.

I pay 14 Canux for 2lbs of Zavida coffee from Costco which is cheaper and fresher than other grocery stores in my area. Zavida's more of a regional brand here, so your local Costco might not have it, but they should have something else that's decent for the price.

Once again, don't buy Kirkland or Starbucks. They're shit.

Their roastery is in Ontario, in or near Toronto I can't remember exactly. They distribute in Ontario, Quebec, some of Eastern Canada, and some of North-Eastern USA. So if you're west of Ontario, you probably won't find it.

Samo Bloom:
Pour 50g water at 70c into switch and put 15g coffee
Let sit for 1:30
Release switch and tare scale

Spoon time:
Close switch
90c water
Pour 100g water over spoon layed on top of the coffee bed
Gently “excavate” the coffee bed

It took me a hot minute to figure out how to brew something half decent. Apparently it you just put it cold on a stove it will start extraction way before boiling point. Boiling water first and then dropping the basket on lowest heat is what works the best so far. Grinding finer is probably next step up but I need to buy a grinder. Overall I'm fairly satisfied with results. It's quick and simple way to make coffee.
