Crunchiness, juiciness, and a bit of vinegar flavor. All three are beneficial to a burger.

I don't get how restaurants do it. The onions and pickles are just right while I try it and it just doesn't work. Most restaurants anyways, there have been a few that's just too fat of pickles.

I only add pickles to cheeseburger fried rice and cheeseburger burrito/wraps*, not to actual cheeseburgers

One or two pickles is a welcome addition to a burger but I wouldn't want any more than that. There is no such thing as too many pickles on a chicken sandwich. Even if you put so many that pickles predominate the taste, it's still good.

The purpose of a pickled item on a sandwich is to add acid. This complements the whole sandwich, which is why it is featured on burgers, hot dogs (relish), bbq, and chicken sandwiches, as well as many other sandwiches.

The acid helps cut through the fat and balance things.

Dry em off. Pickles in restaurants sit in metal bins sans all their pickle fluid, so it all runs to the bottom and they dry off quite a bit. Fresh out of the jar they are fully saturated and too moist.

They add an overwhelming amount of pickle brine and ruin that bite completely. Maybe a little soggy crunch.
Additionally, I find I often don't completely bite through the slice. The entire pickle slice then gets dragged out, often dragging other toppings and any condiment in contact with that pickle slice.
It can potentially undermine the structural integrity of the entire burger while making a mess.
