I recommend you find yourself a copy of the Book of Tasty and Healthy Food: An Iconic Cookbook of the Soviet Union. In typical soviet fashion, it was published by the Ministry of the Food Industry, but the recipes in there are diverse and interesting.

It's pretty good peasant food but very much traditional and feels like it hasn't changed since the early 20th century with things like aspic still being considered party food. Overall it's heavy on salads, soups and baked goods + dumplings of infinite variety. Their high level cuisine is basically just French influenced cutlets and shit though think variations of chicken kiev and heavy sauces which is fine but that's all court food in europe.

There's no real cuisine, just struggle meals or bad copies of euro or turkic foods.

It's because of how their country's agriculture developed. Their soil is very poor, harvests bringing x3 returns, whereas in Europe even the worst harvests were above that (outside of very rare anomalies). Now when russian peasants were left to their own devices, they would just use slash and burn agriculture, get x10 harvest first year, then move on once the soil got depleted, and repeat the cycle. Unfortunately their government forced them to stay on their land, because they needed serfs. So they were stuck at x3, out of which they also had to pay tax, save grain for a bad year, and for the next year's planting.

So they had to eat whatever they could find; one of their famous soups called ukha is made out of fish heads and potato, for example.

The English-language exonym for the city is Kiev, it always has been. Like how we say Cologne for Köln, Copenhagen for København, Ulster for Ulaidh, Naples for Napoli, or Vienna for Wien.
It's only recently with the Post-Soviet civil war that some Americans have hyper-corrected to the Ruthenian "Kyiv" spelling as a form of political statement of solidarity with the Zelensky regime.
It is perfectly acceptable to use the standard exonymic form that one's native language provides when discussing foreign places. I don't expect a Chinaman to pronounce the US as anything other than Meiguo when they are speaking in Mandarin. The term "Kiev" is not political in itself, it is not a reaffirmation of Russian cultural dominance, it is simply the historical English-language name for a city in the Ukraine.
