My own bullshit version of a famous Chinese eggplant dish:
Peel your eggplant if you want, then cut your eggplant into whatever shape you like; I prefer batons a few inches long by a couple centimeters thick. Salt them and leave them to dry brine for about a half hour. Rinse and dry.
You need to parcook your eggplant to prep it for stir frying. You can steam it for a healthier version, or deep fry it for even more flavor. I usually steam mine.
Now get yourself some soy sauce, oyster sauce, vinegar, Chinese bean paste (black bean, spicy, whichever you can find), sugar, and some Chinese cooking wine. Mix all that together in whatever ratio you like the taste of. Adjust the thickness with water. This will be your stir-fry sauce.
Gather whatever other meat or veggies you want to include in your eggplant (I like shiitake mushrooms and minced pork) and prep it for stir frying if you have to.
Grab plenty of garlic along with some ginger and chili pepper, and chop them up real good.
Get a cornstarch slurry made and get out your sesame oil to finish the dish with before you start stir frying.
Start building your stir fry using the cooking fat of your choice; I like using either bacon grease or lard. Over medium-high heat, start with the garlic, ginger, and chili. Add in any meat you might be adding and get it cooked most of the way through. Add your non-eggplant vegetables in and get those fried up a bit.
Finally, add your parcooked eggplant, stir well, and add in your sauce. Bring to a boil, then lower the heat and add the slurry. Cook for a minute or two until the sauce has thickened. Splash a bit of sesame oil on top for aroma and shinyness. Serve hot with rice or noodles.

Slice it in roundels, put it on a kebab skewer with sliced onion and pepper, drizzle the whole thing with olive oil, lemon juice, salt, pepper & hot paprika and then throw it on the BBQ once you finish cooking a good steak

I love eggplant one of my favorite veggies, there's many ways to make them nicely.
