What would this kind of bread be eaten with? Mine isn't obscure but I baked my first sourdough recently and it was 7/10 imo

Butter. I usually devour mine before I can make sandwiches or anything else with it.
If you ratio your recipe down to 1 cup flour you can make a pizza with a cast iron.

Began feeding my starter with dark rye 1:1 with AP.
Makes the starter extremely active, grows big and quickly like on steroids.
I'm surprised how nutritious rye is, even compared to whole wheat—truly a supergrain.

Making a 6% rye focaccia pizza rn (1 tbs rye to 1 cup AP).

I sympathise, though for me it's just rye ideally. So hard to find a normal one that isn't cut with wheat or seeds or some other garbage.

Rye sucks so much ass it's unreal. Can one of you impoverished europoids explain what the appeal of the gelatinous fermented bricks "real rye bread" lovers enjoy so much? I have made several varieties and by all accounts they turned out "right" but they suck shit. Is this just something you had to grow up with, like the rotten fish? I can see in this picture that it has been sliced paper thin, which is the only way this trash is possible to physically eat.

Tastes fine, texture is a disaster. Wheat bread with maybe 20% rye is much superior to pure rye.
