Are we on a viking ship or a pirate ship? Two very different ships with very different crews in very different time periods. For that matter, where and when are we sailing? If we're going to be sailing for 6 months or more, we're definitely going to need resupply, and the time period and place are definitely going to affect what ports have available and even which ports exist.

So we're sailing west from Iceland, for 6 months, somewhere in the 8th-11th century? Yeah we're probably gonna die dude, if the storms and icebergs don't finish us before we reach North America, starvation or hostile natives will. Why wouldn't we just sail southeast instead? It's much easier, there's much more plunder to be had, and plenty of ports to sell said plunder in and resupply.

Actual Vikings went south or east for the most part, Iceland was poor as fuck and Viking Greenland was even worse off. A ship is a serious investment, if you're willing to risk it and your lives for a tiny chance of an unknown reward, you're a complete moron. Granted there's still plenty of risk associated with raiding a European kingdom, but much less and you're far more likely to walk away with plunder or even get some land/titles if you stick around instead.

Other than the obvious hard tack, salt pork, dried cod etc etc, I'd want to bring a jar of lime eggs a la Scalfani, a decent amount of flour and some groats of barley or buckwheat. Having eggs and flour gives us a lot of options for whatever situation comes up, I wanted to make egg noodles but I guess we won't have to since we'll have hard tack to put into soup though I'm sure I'll come up with something, even if it ends up being dumplings with whatever we've got lying around. Since we'll be in the range of Atlantic salmon, I'll make European sushi with buckwheat whenever we catch a fish, the heads can be used to make soup. I think whale steak was on the menu in Moby Dick if I'm remembering correctly, but I bet we could make a lard out of the blubber too and spread that on fresh salt crackers, maybe with some dried fish as a snack. Oooh I'm thinking since our grains won't stick together like Nipponese rice, why not make something like a dumpling out of edible seaweed? Soak the grain in a fish stock, mix with butter and fish then wrap around with seaweed like a monkey's fist. If we've got rum on board, it could be cooked with some dried fruits to make something like a dessert. Honestly the possibilities seem endless.

Still more plunder in England, France and Germany though, plus plenty of opportunity for trade and conquest further east as well. If you're a Viking trying to get actually rich from a raid and not just eke out a living hunting walrus in the middle of nowhere, going south or east makes way more sense than going west.
