this is a mistake in my opinion. any time i go too far crispy with the bacon, in a dish where it will end up simmering in liquid for hours, it doesnt soften back up and has an awful texture
probably why some cooks use lardon, the pieces are too big to pass the crispy point of no return like bacon strips
