Shrimp are pleasing to the eye and make a good stock, but when it comes to eating soup, they get in the way like mussel shells.

It's a high ceiling and a low floor. If you're in a place with access to fresh, good quality seafood, it's amazing. I'm about an hour from the Chesapeake Bay, and there's some amazing "elevated" places doing stuff with local stuff. But I can go to a well rated Thai place in my home city, and get a seafood Tom Kha, and the squid is rubbery, the mussels are pathetic and gritty, and the shrimp is basic bitch frozen grocery store level.

A seafood stock should really be just one sea critter. Lobster, shrimp, bonito, etc.
