I made a large batch of queso dip to store and eat over the week because nachos are my favorite snack.

I accidentally used SWEETENED condensed milk instead of the regular kind. My queso came out like a dessert topping, and it's not great for the nachos I would normally make.

I don't want to waste this whole batch. Is there something I could make to salvage the batch of sweet queso?

I thought about trying to fry some tortillas and dust them in brown sugar/cinnamon for a dessert nacho meal but I feel like there has to be a better option.

Yeah spice is the best way to go here. If you want to experiment, you could try to do something with habanero since the fruity tones might meld interestingly, but you'd probably be safer using something that diverges as much as possible to take the tongue away from the unwanted sweetness.

Spicy is good, but you could also try simple dilution. Make a triple batch correctly and mix this in, though then you run the risk of having an enormous amount that is kind-of sweet and gross. I think smoked peppers are the most obvious approach, and reprogram your expectations to think of it like bbq sauce which is like half molasses.

Find a recipe for crepes with sweet farmers cheese and lemon. Substitute with your cheese concoction. Could add sliced peaches on top.

No, you used condensed milk when the recipe called for evaporated milk. Condensed milk is by default sweetened. Evaporated milk is not.
