There is almost no better dish than a french 3 egg omelette. I just made one and they are so delicious. I also made bread and had it with it but the bread, which I thought was okay, did not pair well at all with the egg.
This got me thinking. This is the ultimate test to see if you have made a good bread. If your bread ruins the meal with a 3 egg omelette, your bread is no good. Your bread must compliment the egg in order to be a good bread.

French omelettes are great but in my experience very difficult to make consistently. I can probably get it right about 25% of the time. I don't want a nonstick pan, but that really seems like the only way to consistently be able to make french omelettes

I found that if I use a slightly larger pan I can get it good a lot of times. I cook it starting on a high temp but I drop it to medium low to finish once it starts getting cooked enough where you cant fill in gaps with the uncooked egg anymore. I fold the top over 90% of the way then fold the exposed part over the middle and I roll the omelet over to seal it there. Slide onto the plate and let it rest for a minute.
Salt the eggs when you mix them but also you could use a carbon steel pan well seasoned if you don't want to use nonstick
I finish with a pinch of salt, black pepper, and parsley.

There are several frying pans of the same shape sold in Japan, so probably they have already been copied to China or Korea.
The difference seems to be the strength of the coating and the thermal conductivity of the bottom.

Don't use unitasker pans anons...git gud, it's not that hard.

Buy a good nonstick 20 cm pan (3 eggs) and exclusively use it for eggs with butter as cooking fat.

I mastered the French omelette during COVID. I love them and can’t eat a regular one anymore. I don’t think I ever had nice bread with it, even though I can make a pretty good baguette, too. If I had any bread it was Wonder bread pseudo toasted in a pan with lots of butter. Philistine move but worked for me.

I also often used to stuff them with a homemade Boursin. Here’s my simple recipe: 1 block of cream cheese; 1 puck of queso fresco; minced garlic cloves; chopped chives. Whip up in the KA. Can add sour cream if it seems too thick. Probably 5x cheaper than the real thing and just as good.
