Honestly though canned meats are a convinient thing but the trade off is that it's never as good as fresh food, I don't know why any sane person would expect otherwise. If you are confused by why so many cultures outside of America eat this very American product, it's a cultural thing and makes little sense outside of that inane logic. Drain the oil into the garbage after sprinkling some flour for it to soak into
Chunk light tuna is actually healthier because the little ones have less mercury. You can eat five cans a week without going over your daily limit for mercury, that's lunch every workday

I don't understand any of this shit.

Shelf stable meat exists only to reduce waste in long logistical chains. Long as in global, military, fema. It's both more expensive than shelf stable products and usually less nutritious, if not mildly toxic.

For the home consumer, refrigerated reconstituted meat eg. Meat loaf, dinosaur nuggets, bologne, is usually half the cost. It's basically gellied meat scraps and is not inherently a bad product it's just that commercial it's made from meat waste. If you make it at home as potted meat it can be quiet good. There are much better recipes than the commercial style nitric salt paste.

The texture leaves something to be desired, as you'd expect from anything that's been canned and processed. But Spam is pork shoulder, it tastes like pork shoulder, a little extra salty but otherwise fine. The trick is to slice it thin and pan fry it, put it on a grilled cheese or something, it tastes fine.
