I'm relatively new to duck eggs since they're so scarce I have to use them every now and then, unlike chicken eggs of course.
I too noticed that the omelette is perfect when I close it and a bit overcooked when I cut them, that's because the residual heat keeps cooking it unlike with chicken eggs that stops cooking as soon as you turn off the heat.

Last time I tried adding rice "milk" to the beaten duck eggs to try and smoothen the hard egg whites and add moisture, however while the final result was pleasantly creamy, the same problem happened.

I have the last 2 eggs in the fridge, probably the last for this year as the ducks stopped making them, so I'll try removing the omelette as soon as I flip and close it.

However keep in mind that it's just how it is, because this egg is very dense and therefore the egg whites cooks way faster than the yolks even if well beaten.

Wish me luck.
