>he isn't fermenting his own ginger beer at home
It's literally the easiest fermented beverage to make. Grind fresh ginger, add sugar, water, lemon. Set on counter for 3 days, strain & bottle. Use fermentation grade glass if you don't want pressure bombs going off in your kitchen.
Best part is, the gingery heat and sweetness is up to your taste.

Ginger ale never tasted like ginger. There's ginger beer which is a soda and not alcoholic at all.

and yet I keep fucking it up somehow
I use the townsends recipe, but it just takes like molasses and it burns unpleasantly like I ate a dry spoonful of ginger powder

All I know about Sprecher is that years ago I got their hard root beer and it was so nasty I threw them out.

Had a Trader Joe’s ginger beer the other day and it was pretty good. Funky, spicy, citrusy. Just unusual enough to stay interesting but not off putting.

Well use an actual modern recipe not some 18th century switchel nonsense. People do this every day around the world with no hassle.

Do you have a recipe you're satisfied with? I noticed you made no mention of added yeast

Try Blenheim Extra Hot Ginger Ale.

The wild yeast is on the surface of the ginger itself, it autoferments.

I see - so you aren't boiling your components together to sterilize everything? I imagine that would kill the yeast
