that really depends on the oil. extra virgin is for cold use cases like dressings or antipasto. it's not supposed to be heated. seed oils should never be consumed to begin with. avocado oil, coconut oil, and cold pressed olive oil are safe for cooking.

And like I said, I can buy Odssea in a good supermarket but its just a big business oil which I'm sure is isn't the best or worth the mark up, there are also some Gourmet bottles in Wholefoods with crazy prices, I'm sure they'll be better than most but no way near a good quality to taste ratio. A little unknown Greek company that isn't mass produced and is half the price would be way nicer. I'm not ignorant for trusting the brands of olive oil on the shelves locally. They taste fine to me. And that doesn't mean I have some unrefined palate either. It's possible to be a snob. You want to find some amazing unknown little mom and pop olive oil producer that doesn't know how good there shit is and only exports it to special people who know about it? I cook a lot with olive oil and pour it on salads and stuff and I still can't use even a 24 oz bottle before it starts getting that old paint smell about it.
I'm pretty sensitive to that though. I eat a lot of nuts and seeds and sometimes I'll get a package that just turns too soon. It won't hurt you to eat it (unless it's really rancid), but it's not as good.
You must really use a lot though if you're getting 3 liters at a time. You being European I can see that though. I use butter more than oils, and I get most of my fat from meats and animal stuff. If I did a Mediterranean thing I'd use more oil.
