What can I do with chicken leg quarters? I'm tired of baking them or putting them in soup. Its the only protein I can afford.

Use only a dry rub. You want the chicken to as dry as possible, no wet marinades. Also smoke hot, leg quarters have a lot of fat and tissue...they can withstand a hot smoke. I usually go up to 350. Just let them sit and that skin will start to render out and crisp. Leg quarters are very very forgiving.

I have 3 in a brine now for dinner
I'm cooking them over charcoal and using BBQ to finish

Could make sandwiches. Dark meat is pretty shitty for most uses.

rub them with salt, pepper, garlic powder, paprika and a little brown sugar and bake/broil them with a serving of parboiled potatoes. Try to have a side of cheap veggies like broccoli to fill you up as well. This was my go-to broke ass college student meal until I discovered those no name frozen chicken burger patties which are like the cheapest $/lb protein option
