why does pace or tostidos salsa have such a different taste and texture from regular taqueria or mexican grocery store salsa?

I’m sure there’s better options but Hormel sells pepperoni like that:

Our block party is coming up. Wife cooked last year so it's my turn this year. I'm indecisive between either ε’–ε“©θ˜Ώθ””ιšθ›‹ (curried fishballs and radish) on skewers or two-layered pressed sushi (idk the Japanese name) with marinated fish cake and dressed cucumber. Which would you go with?

additives for shelf stability and just a matter of having your own recipe.

skewers seem like less of a hassle. i guess it depends on how many people will be showing up but a block parties worth of sushi sounds like a lot of time.
