you can do anything as a taco. potato taco, chicken, beef, tongue, banana even. There's lots of different types of meats and different ways to prepare them, with various marinades and cooking methods. Especially when it comes to mexican tacos. They'll dig a hole in the ground and slowcook a whole goat in some giant metal tub with all these herbs, broths and spices. They don't fuck around lol.

Yep. Goes both ways, too. If you only eat delicate foods, you won't be able to discern the subtlety of spicy food and it will just seem like an overpowering cacophony.

I eat a lot of thai/laos food which is very hot as well. I lose/gain taste/tolerance all the time when I take breaks from either side of the spectrum.

Mole in California is very hit-or-miss in terms of getting it sickly sweet or not. It's not even a spectrum. It's either "candy bar Mole" or cocoa/smoked pepper based Mole. And I was sort of disappointed to find that in many cases they just use smoked peppers and leave out cocoa altogether since it's more expensive.

Lamb is not unheard of but it's uncommon in daily American cuisine. If you eat at restaurants, you are more likely to find it at Middle Eastern places or even Indian places. Lamb chops are still considered a normal American dish but relatively few places prepare them. I think it just comes down to the primacy of beef, which has even overtaken AUS/NZ, formerly (?) the world's most notable sheep herders.

For Americans, since they are not allowed to have proper Greek pork gyros due to jewish-turkish dietary concerns, much of the gyros were formerly lamb, but now are beef or a "beef-lamb blend" instead.

So yes, lamb is now a specialty meat from the butcher, much like horses in Spain, or dog/human cadavers in England.
