i got an electric griddle cooker thing like this used it once and was frustrated, and bought a carbon steel griddle i use on a regular burner/any heat source instead
tldr the nonstick surface is a disaster for any real cooking because it scratches ultra easily and then you're eating it
whats the recipe for the viet bbq pork you are using, though?

I have one that has a glass lid. I really like the temp setting/thermostat. The lid ensures cooking through thicker steaks and pork chops and items not drying out. I get to grill inside when it's just not fun to stand in the rain or heat.

sounds fancy... i'd buy one like that if it was ceramic nonstick, rather than the pfa or wahtever bullshit goopy stuff that scrapes easily they use on 99% of the cheap shit is

i can see the benefits of it, but confused why a stovetop cooking situation wouldn't be an option here

is it cause of the shape of the ridges on the surface? cause pans can have those as well

I little too much salt, but otherwise excellent. I bought this because cooking meat in a normal pan would often cause excess moisture to seep out and steam the meat rather than brown it. I was able to easily get grill marks on the pork with this thing.
