It tastes good, it has good macros if you avoid the Cowabunga Lucky Dragon Jelly Donut Rolls.... and it still seems slightly exotic, when in reality it's so completely normalized that only literal boomers get filtered by it. (Although the same boomers will happily eat raw oysters for some reason.)
It's also quite amazing that more people don't get sick, or at least we don't hear about it, considering that there is no such thing as "sushi grade" fish and we're all just relying on the miracle of flash freezing, plus whatever 20 minute health code training was done by the Mexican or Korean guy preparing it. (No, your gas station sushi was not made by a Japanese.) Speaking of freezing, did you know that ACKSHUALLY salmon was unknown in Japanese cuisine until the Norwegians introduced it in the 1980s along with grorious freezing technology to kill the huge girthy parasitic worms that infest all salmon, especially the one you just ate? So much for tradition, amirite guys? I'll bet samurai weren't real either. And that's a certified Reddit FACT.
