The steak is untouched by heat in the middle right of that pic yet overcooked on the far left. You should let it sit out of the fridge for 2h before cooking cook for less time, then let it rest for 6 min after cooking.

Not OP but whatβs the benefit of eating the fat? I bought a bao with beef filling today but while tasty there were big chunks of soft beef fat inside and I ended up tossing it.

It tastes delicious because it holds all the flavor and butter. If also helps if you know how to cook unlike OP and actually render the fat to make it edible. Getting a Ribeye and not eating the fat is dumb as fuck, and you may as well just get a cheaper leaner cut.

I ate the other 20 ounces. That's a lot of rare meat. I ate the rest of the fat. Those last parts were tough and gross. I even chewed and sucked on them and spit them out. There was also all that garlic butter sauce. A LOT of fat was consumed.

2 hours out of the fridge is not necessary for a typical steak. I typically take the steaks out of the fridge, season them, and let them sit for 10 minutes while the grill heats up to >600F. Then, I cook them to my preferred internal doneness in about 6 minutes, and then I rest them for 5 minutes. I get a perfect medium steak every time.
