Why would you want limp, rubbery broccoli? If I wouldn't serve it raw I won't cook with it. I would know it's in there and it would cease to be appealing.

I suppose you COULD utilize old, limp, rubbery, lifeless and pale broccoli into this soup if you didn't give a shit about quality. I just wouldn't. I had to throw the other away. Broccoli is inexpensive. Life is too short to eat bad produce.

Yeah, it's for soup. Nothing is lost except toughness. I've blended it too early and the texture isn't as good. There's a lot of cheese and bacon grease in this soup. It's actually quite forgiving to the broccoli no matter what.

I've never considered making broccoli soup but with bacon fat onions I don't see how it could turn out bad. Of course it looks like slop but I bet it tastes great

It's amazing. I only put it in a bowl with bacon for the picture. I usually just add a little Tabasco and drink it from a coffee mug. Very rich. Keeps you full for many hours.
