Discuss eggs. What is your favorite type to make at home? Have you changed favorites before? Anything you add an egg to elevate it?

For me, I have been making scrambled the past year a lot. Before, was doing sunny side up for years. Scrambled feels more filling.

Sometimes when reheating pizza I like to fry an egg to top it with for breakfast.

My go to is omlettes. They're more fun than scrambled. Its fun flipping in the pan with a flick of the wrist.
Usually 2 or three eggs. A dollop of sour cream and some green onions from my yard. It has cheddar on rhe inside at least. Sometimes with bacon and or green peppers.

Because even if you have a non stick you have to use some oil ideally. No one wants an egg to taste like olives and most people don't want to cook with only unhealthy butter.

1/2 cup canola oil
3 egg yolks
1 tablespoon lemon juice
1 pinch salt
1 pinch cayenne pepper


instructions:
Warm oil in microwave for 20 seconds
Whisk egg yolks, lemon juice, salt in a microwave safe bowl until smooth. Slowly pour warmed oil into the egg yolk mixture while whisking.
Microwave the mixture for 15 seconds on high. It will be lumpy, so whisk all the lumps out. Microwave for 15 seconds on high and whisk lumps out again. Microwave for 15 more seconds, whisk and serve.

Scrambled eggs: mix together eggs, sour cream in place of milk,chopped up jarred sundried tomatos (use some of the oil from the jar to fry it in), salt, pepper, red pepper flakes, and add feta crumbles on top. Maybe add some spinach/ arugula and chopped up garlic in there, too. Make sure to whisk vigorously right before you put it on the pan for maximum fluffiness!

Typically I'll pam a non-stick and crakc two with a finger flick of water at 5/10 and cover. Take a quick shower and I got perfectly cooked sunny ups with a tiny bit of chunky but mostly yolk. Bit of pepper and salt and like the plate after. If I fuck up and break the yolk it is scrabble time. More babying at 6.5 with lots of movement after the semi-solid base forms. Takes off heat when still pre-done and keep folding for another 20 seconds while residual heat cooks the rest.

Eggs slid onto plate and I immediately wash the rubber spat and pan so they are clean and drying while I'm away. Katsup or hot sauce if I am feeling frisky.

Every other answer is garbage. I've perfected ever other type of egg. Silky French scramble, airy Tamagoyaki, etc. It's shit compared to a simple yet perfect cook.

Steam is simply the mechanically best method. There is zero room for fuck ups. Requires the least amount of additional attention or utensils. Just fucking cover and let the steam do the same thing as flipping it over without the risk of yolk integrity failure.

When I am truly hung over I just crack 1 egg and stir it and let it set in a 4 inch pan. Then roll it over and eat it by hand before going back to sleep at 5am.

My favorite has got to be devilled eggs or egg butter (~9min boiled eggs, cut them up with fork into small chunks while eggs are warm and mix it with room temp soft butter, then spread on top of bread slices)
