We live in the jet age. Spices have been abundant and not rare at all for nearly a century. Get off your rich-people soapbox and enjoy eating whatever you desire.
Rarities today are probably only overfished seafood. I remember the last time I flew back from Alaska, it was mid-July, and the jetway must have had 15 stacked ice chests ready to go in the belly of the plane: smoked salmon, and frozen halibut so valuable, the savings that incurred in the costs of the flight, charter fishing it yourself, smoking & packing, and having literal tons of it to bring home paid for the trip, likely. Good luck getting fresh king crab, gulf oysters, redfish, or whatever you want one day soon. I just say bluefin tuna season closed after only ONE DAY this past year. Florida lobster gets only 2 weeks. Stone Crabs used to lose one claw and went back to regenerate the claw, and now they are allowed to take both claws. Hrm.
