Eh...I don't disrespect them necessarily, but as somebody else said I do see it as kind of immature and close-minded. Some preferences are fine, but there is a point where you're just being childish. That said, it's not really a big deal, at least as long as you don't make a big deal of it. At the end of the day even if I think your preferences are silly, it's not my problem, eat whatever you want. But if you're the kind of person who will bitch and moan if I serve you something that doesn't suit your preferences exactly or if you're invited to a restaurant you don't like, that drags you down into disrespect. It's fine to politely turn food down, but I'm talking about people who cry and force others to go out of their way to accommodate them. At that point, I'm not going to make you food or invite you out to eat anymore.
