French dip is just a worse Italian beef, so it's out. The question then comes down to grilled beef vs slow cooked beef, which is simply a matter of personal preference.

No it's not. The vast majority of cheese steaks use garbage meat. The vast majority of Italian beefs use at least mediocre quality meat.

They were developed independently of each other around the same time in completely different parts of the country. The meat and broth and bread are all better on an Italian beef, and the addition of peppers is an objective improvement.

Assuming the exact same cuts of meat are used, the way Italian beef is seasoned will still result in a better tasting sandwich and broth.

The way I see it, French Dips can be almost a mixture of a Philly Cheese and an Eyetalian beef
Roast beef, swiss/provolone, horseraadish, actually jus made from mirepoix + bouquet garni, add peppers
Only thing that makes the Italian beef distinct is the spice, and you can always make a spicy cheesesteak or French Dip

They'll both be slow cooked, the French Dip is just roasted while the Italian Beef should be braised. Braised meat is usually better than roasted, but roast beed holds together better in a sandwich than braised meat

Oh sorry I got confused and thought you were comparing the philly to the French dip. Italian beef and French dip are very similar but the Italian beef is better imo. giardiniera works insanely well with the meat.
