If they were honest, they really really really like buffalo sauce, but not really bone-in chicken, gristle and floppy skin. If the meat and skin together don't cleanly come off in one single piece at first bite, they're going to gnaw off a glob instead and always leave the rest on the bone. Blame the chef. There are so many kitchen shortcuts to make these a fast appetizer food that they're rarely cooked right.
Go to a restaurant where they do cook them amazingly well, and well done, and you'll see the difference. Pick is Sports Grill in Miami, where the wings are fried, sauced, then grilled over charcoal with a brush of worchestershire garlic butter on top of the buffalo sauce. The skin is crispy!
