Surface blue mold isnt an issue if that much geotricium white mold is present but you should be eating cheeses like that within a week of purchasing

Smell it, if your mouth waters taste it, if it tastes good it should be fine. I don’t think you should eat the blue mould so peel that off. Also if the texture of it has changed too much it could be rotten, like if it was firm but is now really soft or otherwise

Ive only had raw cheese a handful of times. This cheese is a lot sourer than a pasteurized cheese. Also it seems that raw cheese walks a fine line between safe to eat and spoiled. It sticks to the mouth more.
Tastes pretty good though. Would eat again. Thanks to anons who adviced me.

Very good actually. It seems to grow on me. The first bite tasted a little strange and was wondering if it was still good since it was sour and it sticked to the mouth a little more than usual. But the more i eat it the more i enjoy it.
Im gonna look for more raw cheeses from now on. Seem it doesnt keep as well as pasteurized though? Not sure.

get some brie, keep it in ziploc
the white mold will grow over the cut. Most cheeses are very alive, brie has no expiration date, it will get creamier and stronger until the mold has digested it to the point it tastes of ammonia, that's called black brie and is usually thrown out. Many cheeses attract yeast btw. It's safe but fucks with the taste

Based. Have you ever tried using kefir as a culture? You can make thermophilic and mesophilic cheeses with it.

Last time my goats were in milk I used almost exclusively kefir as a starter and it added incredible complexity to my cheeses.
