After twelve years of doing this, I tried to get out, about three years ago. Took a construction job, which sucked worse than any kitchen job but I didn't know what else to do, and that's a whole different story. My coworkers looked at me like I was a psycho any time I said "corner" or "behind," and the company had to force me to take breaks, like my supervisor had to threaten to write me up because I was breaking the law by not taking breaks. No kitchen I ever worked at in this same state, ever gave a shit about labor laws, if you're hungry, scarf something down as fast as you possibly can and get back on the line. Need a minute to get off your feet? Say you gotta take a piss; say you gotta shit if you're trying to get a whole five minutes. Doesn't matter if you're working 12 hours, doesn't matter if you're working 12 hours on your day off because some cunts called out. But then the big tough super manly blue collar construction guy absolutely has to take a whole hour for lunch.
