It's the best for vinaigrettes imo since it has little-to-no flavour of its own. It just tastes of vinegar.

I like it for vinaigrettes because I use a lot to make a thicker dressing and hot mustard ends up being too much for a salad.

It still tastes like mustard. It's just milder. It doesn't just taste like vinegar. I like hot mustard for some things but not all.

Vinaigrettes and dressings are 2 different things serving 2 different purposes. Vinaigrettes are used sparingly to accentuate a viable product. Dressings are used in vast quantities to hide the fact that your vegetables are shit tier supermarket slop.

Good mustard only has 3 ingredients: mustard seed, vinegar and salt. It's dead easy to make at home. Bad mustard replaces some/most of the vinegar with water. It's that simple.
