People haven't washed their meat in the West since at least the 1900s. Maybe on some rural settings but nope it's not a thing people can remember their parents (or even grandparents) doing. Slaughterhouses already prepare and wash the cow carcasses when they are chopped out and make sure everything is clean and healthy before shipping it out.

I tend to wash my chicken in salt water overnight and then wash the salt water off before drying it

Yes. Grew up on a farm, helped butcher many a chicken, rabbit, hog, and deer. We gutted them, rinsed out the cavity with the water hose, then skinned/plucked them and rinsed off the outside. Then broke them down and packaged up the various cuts for the freezer.
