Rice Pudding
Today we will make rice pudding
Please excuse my humble and dirty kitchen which I will try to hide with cropping

Things I will use
>large pot
>whisk and/or spatula
>Rice (I like short grain)
>Milk (whole)
>Heavy cream
>Condensed milk
>cinnamon sticks
>nutmeg
>lemon zest
>vanilla paste and extract
>4 egg yolks
>maybe a little sugar if I feel it needs it

Step 1: prepare the rice
This is 5 cups (the little Japanese cups) washed and cooked

Step 2: Add the rice, milk, cream, and sweetened condensed milk to the pot

Step 2.5: add the cinnamon sticks, lemon zest, and vanilla items

Now apply medium heat until you see bubbles, then low heat for a while
Stir often

While that is cooking, prepare the eggs
yolks only, no whites


Look, bubbles!
Now reduce to low and keep cooking until it begins to thicken

Egg yolks are ready for tempering now
Add some of the pudding to the eggs and whisk

When the pudding is ready to come off the heat we will add the eggs in

A little brown and some refined
Not much, just to taste

As you can see the rice is now showing above the liquid and getting thicker
This is getting close to done
Cook longer if you like a soft rice
Or stop earlier if you like it firmer

This is good
Rice has a nice bite to it but gives way easily, just right
Now heat off and incorporate the eggs

Pudding is now off the heat
Can fish out the lemon and cinnamon sticks at this point
Cover and let cool, then stick in the fridge

Top with nutmeg when served
Can also be served hot
I much prefer cold myself

It's pretty easy to make, you should give it a shot
Only tricky bits are turning the heat low so the milk doesn't scorch and tempering the eggs but other than that its just sit and stir

Just get the milk/cream an inch or so above the rice to start
And otherwise taste it and adjust as you like

way to mushy, looks like oatmeal, needs to be alot thicker and whip up egg white for a topping, do better next time
