Regular Switch with V60 glass cone tends to make brighter cups on average, even with immersion, also there's bypass.
Switch with Mugen is absolutely balanced with more body and tamed acidity, the extraction is even.
The Tarachine is like the Deep27, it's a fast dripper and there's bypass if you the water level exceeds the puck, it's meant for medium to dark roasts and it makes cups with full body and sweetness.

I just need a flat bottom brewer and I'm done now.

Does anyone know of any keep cups that don't have plastic/ silicone lids?
Only thing I can find online is pic related with a ceramic lid, but the smallest size is 350ml (looking for something more like 250ml) and it isn't leak proof.

44 gallon drum filled with cold filtered water and ground coffee wrapped up in cheese cloth(make sure it cant open up)
about a month if refrigerated and sealed properly
punch a keg tap near the bottom(or punch it in the top and lay it on its side) before starting and remove the coffee before serving
let sit for 1 week, opening and pushing the coffee filled cloth around a bit once per day.

ok i calculated my giotto flow rate at 6.5 g/s
oh that was with a empty portafilter in(if that makes a difference)
tried my 22g basket today, it works fine but i think i prefer the 18g, also it just falls out when knocking the puck out which is annoying
and the shots werent any better
but they were more aesthetically pleasing to watch but maybe thats just me getting better at brewing.

i have read that the flow rate should be higher than that and it could be caused by scale build up in the grouphead/mushroom

I don't know what a "keep" cup is but I'll assume you just mean a tumbler or an insulated vacuum bottle
Pic related is the Fellow Carter (Wide). The smallest it gets is 12oz/355mL and it's got a screw top. No sippy option unless you go for the Carter Move version that's taller and thinner and comes with a splash guard insert

this question is a lot more complicated than you think. in a literal sense, more extraction does equal more flavor but in practice the flavors extracted at the tail end of extraction are often less palatable. this of course varies from coffee to coffee depending on a variety of factors like processing, origin, and roasting technique. moreover because taste is subjective and experience based the sweet spot of "best" taste is different for everyone.
all you can do is experiment to try to find out what you like.

No, retard. Less extraction was the whole fucking point of turning down the boiler temperature. Bitter coffee means it's over extracted. There are other changes you can make to get less extraction, but a 5C drop in temperature is pretty easy and solid option. Not many roasts need more then 92-93C anyway.

Excellent choice. I bought mine 9 months ago and it works great. Espresso shots have great clarity, pourovers are a breeze when I want a longer sippin' time.

Just be aware that hand grindin' cucks with buyer's remorse will try to shame you for your purchase. Never mind that their grinders were also made in China, just bully them relentlessly until they kill themselves. The weak should fear the strong.

it didnt
ran way too fast(on the exact same grind setting my daddy's girl blend borderline stalled so i have no idea wtf is up with that, i know its a lighter roast but its not THAT much lighter)
and it not only channeled it spurted a jet of coffee all over my hand(on the e61 lever) luckily it stopped the beam of coffee spraying across the rest of the kitchen
the shot smelled and tasted like peperoni + lemon juice
dumped it
made another with daddy's girl and turned it into a copetardo
great day overall tho

i use the origami but its the same thing, but more finicky
i always start with 5.0 and go from there, sometimes they are good at 4.5 and sometimes are good at 5.5, i grind on an angle too for slow feeding
i use 4:6 method with some variations, 5 pours and a bloom of 30 seconds, the bloom i do 2x the weight of the coffee, this works most of the time
i bought a washed ethiopian recently and since they produce way more fines, the best cup was 5.5 grind size and 4 pours (30ml, 70ml, 75ml, 75ml)
