It textures the rice, not so much for flavor but if you like the restaurant rice which clumps up and isnโ€™t sticky, thatโ€™s how you do it.
If you skip it, the rice will be softer. Some people will prefer one or the other way but I wanted to show how itโ€™s done the restaurant way.

for me it's the ThatDudeCanCook technique:
>1 cup of rice, washed
>1 and 1/3 cup of water
>in a cold pot, lid on
>place it on high heat
>as soon as steam starts coming out from the lid, reduce to low and wait 10 minutes
>remove the pot from the stove and wait 10 minutes more

Here's an actual foolproof method.
Put rice in a pot, pour way more water that it will absorb. Salt to taste, cook until desired firmness then strain it on a sieve.

its probably the combination of rinse/soak adding water and the foil seal limiting evaporation. but i must say using a sheet of foil every time you cook rice is pretty wasteful. that shit is more expensive than it looks.
