I really don't mind overcooked shrimp. I put shrimp in gumbo when it's boiling and then reheat it to boiling over and over for days with the shrimp in it and they're still fine.

One of my go-to's is making a carbonara sauce, but then adding a handful of basil pesto. I have it with mushrooms, spinach, and bacon.

I've had carbonara with guanciale and it does make a difference in the taste. I kinda prefer it over bacon, to be honest. I like the strong taste it has.
Anyways.
Another pasta I really like is a meat sauce with pine nuts and gnocchi. I lightly sprinkle crumbled blue cheese (or gorgonzola if I have some) on top at the end.

Cravingswise, I will dream of two comfy italian dinners typically.
Lemon piccata chicken cutlets, on angel hair. All that fresh lemon tanginess combined with the capers. I love it.
And, unironically, I really find a mood satisfied by a grilled blackened chicken breast on top of alfredo fettucini. I like lots of other asian and italian dishes featuring noodles, but these are my top 2 when dining out. It's summer, and I do make cold sesame noodles w/peanut butter for a cold salad to have in the fridge. Any reason to use cucumbers, green onion or cilantro.

Now in my own house, I crave large floppy egg noodles on a cold winter night, all buttery w/fresh parsley, (sometimes pappadelle) as a side to a thick stew of slow cooked chuck paprikash, yummy sour cream on top of it all. Pop of barely steamed peas every few bites.

Any kind of pasta with bolognese-type sauce is my favorite. I like my salsas to have pieces of conserved tomatoes, diced onions, minced meat, garlic and parsley, and if I'm feeling adventurous I add a little bit of white pepper for an extra kick. I also add a little bit of sugar to the sauce to control the acidity of it.

...I can't even begin to imagine the taste of that. The peanut butter things we use in Argentina are almost always sweet, and if it's salt it's like, the peanut itself. But a salty paste of peanut with pasta sounds a bit bizarre.

The old lady who lives next to me grows tomatoes. The best goddamn tomatoes I've ever had. I help her out with stuff she can't do anymore (yard work mostly, sometimes small repairs around the house) and she always gives me a fuckload of tomatoes.

I just make a basic sauce, onion, garlic, red peppers, then the tomatoes. Let it simmer for a while, little basil and parmesean on top at the end with spaghetti.

Those fucking tomatoes are so good I don't add meat. I do for other dishes with them (lasagna mostly), but that super simple sauce and pasta is unreal. When that old lady dies I'm probably going to just kill myself rather than live without. I've tried growing them from seeds from the tomatoes, don't turn out the same.
