I can't respect someone who spends their whole long life kneeling to tradition and the old ways because that's how they were done in the past. I respect someone like Masaharu Morimoto 1000x more for having the stones to actually be willing to try to innovate with outside techniques and cuisines.

Trained in traditional sushi in Japan and opened a restaurant there at 25, but eventually sold his restaurant 5 years later to travel abroad and study different foods and cultures and opened up new locations with different influences. He succeeded more traditional japanese chefs on Iron Chef Japan when he returned and the show and his dishes were better for it in my view.

I liked his outfits in Iron Chef America better. He was one of the best parts of that show even if it never came close to the original in terms of quality.
