Big reason I started avoiding his videos is his fucking obsession with sous vide. With just about anything else, not having the equipment on hand would just mean it takes more time, requires more physical effort and might not be perfectly uniform, but most of it is ultimately still relatively doable for the average person because none of those other things require you to submerge a laminated piece of meat in a temperature controlled tank for hours on end.
