For me it's young gouda. A cheese you can always eat.

We have a saying in poland about oscypek "To nie oscypek jebie fiutem to fiut jebie oscypkiem" and I think its wonderful.
Make sure to slice it thick and pour a little vinegar on it to enchance the flavour.

New Amsterdam is a mass produced fake cheese. Reypenaer is leagues better. Buy it if you see it. It's fantastic on its own or grated over eggs, steamed broccoli, or pasta.

Best stuff I've had it local shit like "Dunderklumpen". Hard aged cheese you slice on top of sandwiches.
Otherwise deli cheese like "Havarti", I once tried "Havarti Gold" because I assumed it was similar but ended up having a massive disappointment.
