Get a well-reviewed All-Clad knockoff if you're looking to economize. That will be 3-ply stainless with an aluminum core. I don't know the base thickness. The All-Clad saucier is every bit as good as they say. Supposedly copper is even better.

Copper base's advantages are marginal (on modern stoves, if you're cooking over a Victorian coal-fired thing that's different) and titanium has no real advantages at all, both are just marketing spin to take your money.

3 ply is the best price to performance ratio. 5 ply is better. copper is further better. silver is further better.

The only things I haven’t cooked in it are superdelicate foods like crepes or fish. I cook eggs, pancakes, chicken, beef, pork, veggies, use it for baking cakes and breads, and making sauces (except for tomato-based sauces. Those are too acidic and will eat the pan).

I’ll also shill for cast iron as a baking dish. It holds heat really well, so it helps to brown anything you cook in it. Pineapple upside down cake from a cast iron skillet is excellent.

That's literally all you need to start. Stainless steel does 90% of the job of cast iron when it comes to searing, and it can be used without food sticking if you learn the basics from a 5 minute YouTube video. If you cook a lot of delicate fish and eggs, consider a secondary non-stick pan and be prepared to replace it every couple years or whatever.
Cast iron is a meme. I own them. They're heavy, annoying to care for, and unnecessary. Carbon steel is a meme. They're annoying to care for, and people only like them here and on Reddit because they're used in commercial kitchens, and faggots want to LARP as chefs.

There's absolutely a pervasive gearfagging problem in guitar, but to be fair there are a lot more genres that use guitars these days, a million varieties of rock, country, metal, jazz, blues, etc., and they all have their own expectations for tone. Copper for non-acidic things, Stainless for acidic things. Cast iron's for niche applications.

I bought a cast iron skillet long ago and haven't really used it much. I just dumped it in an also unused oven.
It's sure to be rusty by now, so the question is, what kind of cleaning do I do to be able to use it again?

Cast iron is actually dogshit. After the initial heat transfer, its awful and uneven heat conductivity means that as you cook you're not going to get uniform browning nearly as easily. Any sauces or deglazing you do also runs the risk of fucking up your seasoning or picking up old, oxidized fat flavors (since nobody cleans their fucking skillets). Good clad stainless is just the perfect workhorse for pretty much anything including seafood, but if you're really really finicky about it copper or other luxury pans have even better heat transfer. I don't know where the cast iron meme really picked up. I suppose they do last a really long time and are hard to fuck up, but instead of bending or warping like a badly treated steel pan does over time, they just shatter. Pick your poison I guess.

Please note that dutch ovens (enameled or otherwise) serve a different function than plain old pans and are better suited for what they're intended for e.g. braising, burying in coals outside, etc. That said, a stainless steel roasting pan still works amazingly well for a lot of things and people don't do enough with them other than make turkeys or rib roasts.
