Any other food industry survivors browsing right now?
I'm having flashbacks again.
Wife asked me to help cook and she was chopping onions so sluggishly I had to remove myself from the situation and lay in bed for an hour

It's all fun and games till a post service funeral procession comes into your Texas Roadhouse at Sunday evening at 3pm expecting 3 blooming onions ready to go before the drinks are even out...

Civvies...

What we lost back there...

You people are pathetic. Get another line of work if you really think of line cooking as "going to war" or some shit. I've cooked professionally 20 years. No fucking "flashbacks".
Have your mise together and don't be hungover and you can handle everything fine. Don't work at places that aren't organized.

Eat shit, pedo. I've never heard of any weebs in the kitchen. They'd know better than to talk about their baby cartoons in the kitchen anyway.

>Don't work at places that aren't organized
Yeah, because the kind of people who make up 95% of cooks are totally in a position to be picky about who they'll work for

I'm a fucking baker/cake decorator and therefore retail, sure it ain't michelin star material but it's honest work, will say the amount of old hags are more comparable there compared to any other fucked job.
>"what do you mean you can't place same day orders? i need a cake today for my grandson's half birthday!"
which btw entitled people actually celebrate "half birthdays" even "quarter birthdays" I've seen, and you have to hold your tongue so often.

Being a chef is indeed much like being a combat marine in the army.

I used to think the only way it could be worse was to be a cook IN the army.
heh, how naive I was.
the army cook at least has combat as a distraction. The potential for a stray bullet to end the insanity... well those army boys might think they have it hard, but they don't know how good they got it

>I used to chop you know.
>Julienne, mirepoix, chiffonade.
>I could do it all
>Civies used to come from miles around just to see me prep.
>I was fast too, wernt nobody quicker on the line then me.
>Then cost cutting came.
>In the name of efficiency they said.
>Now it's all pre cut and packaged stuff.
>You would think the worst thing would be having to say yes chef to middle manage named Ted.
>But that ain't it at all son.
>Nah, the worst thing is having a 20 sumthin named Shaniqua look to me with hope in her eyes after plating an over cooked understated chicken Ceasar that she didn't even have to cut.
>All I can do is give my demi a fake ass smile as I choke out a 'Mise en place brother, mise en place'
>Poor kid never stood a fuckin chance.

With an education and 20 years experience you write your own ticket. And if you're worth a shit you'll be running the kitchen within a couple years.
Yes, lowly line cooks who can't get other work and can't rise to the top in their kitchens have to take whatever jobs they can get. I will never be one of them. I will always be the best. Sometimes you work for a guy who doesn't want competition so I have to pretend I'm not the best. Sometimes it's a game of politics. Sometimes some "loyal" dumbass has a position of authority that doesn't match his skills, experience, and education. I won't suffer fools. I can't take orders from someone I don't respect. If I don't ascend I move on. I do not compromise. I won't serve some old shit you want to make a profit from. I won't send out anything subpar. I can't even imagine working for some kitchen manager of a corporate chain. When I do an interview it's to judge if I want to work there, not if they'll have me. I always have enough in the bank that I don't have to take some shit job. When you have the upper hand you can make the job what you want it to be.

I disagree if you know how to game your job, employee discounts at the bakery are eh but it helps with access to fresh from scratch bread.

Touche about the hours on any of these jobs (even mine), I'm 17 in the hole after just paying rent and my phone bill.
