The carcass is for chicken stock for future soup bases, esp with wing tips and you can freeze drumettes and wings for future appys

I've cooked more whole birds in a pressure cooker than you can imagine and never once has respect been a concern. And it helps speed up the time to get a bit of stock since I can toss the carcass back in the liquid and boil it off.

Now that I think about it you're only actual experience with chicken is those shitty rotisserie chickens at grocery stores. Of course they're going to be dry.

Mince or crush garlic, a whole head. Rub the garlic and unsalted butter underneath the chicken's skin. Rub salted butter all over the chicken's outter skin. Lightly grind black pepper over chicken. Sprinkle dried thyme and oregano over chicken. Brown under oven broiler. Insert whole chicken into Instant Pot. Add one cup chicken stock and white wine. Pressure cook on high 35 minutes. Allow natural release and plate for carving. Easy and delicious.
