what cooking oils do you use in what situations? is avocado oil the true meta, neutral, "healthy", and high heat but it comes from mexico and there was that whole adulteration scandal

I use cheap VO for bulk frying, and rice bran oil from the asian grocery for pan cooking. EVOO for salads and sauces.

Irrelevant, smoke coming from oil is just water and solids evaporating, it's not harmful. The actual bad thing that happens to oil at much higher heat which you want to avoid is oxidation and EVOO is very resistant to it because it's both very stable and rich in antioxidants.

Not that expensive if you aren't stupid and choose the right pot, but i suppose it might be an issue if you're borderline in poverty. Deep frying is a degenerate cooking practice anyways.

I use olive oil for stuff that I want to taste like olive oil, such as pasta, some meats, some sauces, usually italian cooking
Lard or duck fat for daily meat frying or sauteeing. I usually use lard for everyday meals because it's really cheap, duck fat for more fancy meals or beef (except steaks, I always use lard for steaks)
I use goose fat to cover my form for when I bake rye bread. Mostly because it has the best physical characteristic (is spreadable out of the fridge, doesn't melt in room temp, keeps firmly on the walls)
I have canola oil. I use it for seasoning pans and sub it in sometimes when I don't want the taste of lard or I want to make something vegetarian or need a liquid oil with neutral taste (such as for mayo).
I use flaxseed oil and blackseed oil for salad garnishes. They're both nice but have different taste.
I use butter for eggs and some friday meals. I also use it to get a nice brown on roasted poultry, mostly chicken, and use it in various pastries and for roux.
That's pretty much all the fats I use.

Only little Timmys are scared of seed oils. You can't get it up because you are a fat lazy, video game playing couch potato. Don't blame seed oils. In parts of Africa they use transformer oil to fry their food but yet look at the size and potency of their black cocks. You fucking idiots go on all day about seed oils and plastics and sugar.
