I recently found myself in possession of a quart of jalapenos so I made this relish:

You can get away with less sugar. I used ACV instead of white vinegar. I would recommend about half as much celery seed as the recipe demands. I also added a clove or two of garlic and omitted the ground black pepper entirely. It was pretty good and a hit at my cookout.

I ended up making pot roast without a recipe. it's pretty good, but I think it would be better with a squeeze of lime juice or some vinegar, and corn starch would have been more appropriate to thicken it than the butter and flour I used. also the extra hots are actually pretty hot and my nose is really running.
