Accidental Dry-aging?
to start off, I am not going to eat it. not risking it for $6 of steak
but im curious. last night, i salted the steak well and then wrapped it in paper towels (it was covered too)
i forgot about it and fell asleep, woke up
and it smelled perfectly fine, in fact, actually good
and the color looks fine, no sliminess or anything
what are the chances that i actually semi dry-aged it and its still safe to eat when cooked?
(again, i will not be eating it, i am not risking food poisoning for $6)

How hot is your kitchen? I dont think it can go bad after 1 night at room temp unless your room is really hot.
If it doesnt smell bad then i think its perfectly safe to eat.

Then i think you have nothing to worry about and should just eat it. If it looks fine and smells fine then it probably is fine. Trust your senses.

Do you think people ate all their meat in one day before fridges were invented?
>>21584773

What is it with your weird ass fear of things that are not in the fridge CONSTANTLY?
NOTHING happens over ONE night. I'd even eat minced meat after one night, just making sure that it's all properly cooked first. With a compact slice of meat NO problem whatsoever.

Just in case you want to do it the not stupid way next time, you can dry brine any meat in the fridge by coating the surface in salt and letting it rest uncovered in the fridge. 5 to 10 hours is about the minimum, but you can go 24 hours or more. Refrigerators effectively function as a slow dehumidifier.

If he salted it well, it should be fine provided the steak is cooked at least to medium done.
