Food thermometers are useful but get the kind that actually goes in the food, infrared thermometers are pointless for cooking unless you're using it for reading the temperature of the pan or something.

Sometimes.
If you bake chicken for 30 minutes at 350 and find that it's not cold inside, I think you don't ever need to temp it again to know that it's going to cook thoroughly.
But, assume it somehow isn't cooked fully. Oh no, I guess you'll have to put it back in the oven and make a mental note to cook it for longer or hotter.

Temperature is irrelevant for nearly everything else. As long as it's too hot for you to touch, it's too hot for bacteria to grow, and everything else that would kill you can't be cooked off. You'll live.

They have this sense of "pride" that cannot be challenged when it comes to cooking, if you undercook food it's considered this horrible faux pa and it means you're a failure.

The idea of learning is gone in these people's minds, if you fail once you deserve to be ridiculed and shamed for being a generic failure. If you don't cut into the chicken, look and see it's raw, then put it back in the oven to cook, you're normal, if you do, you're a failure.

If you don't have a dedicated air fryer with a temp setting, it can be useful to get fry temps correct. If you're making sugar products or tempering chocolate then it can be very useful. Most of the time you should be building the skill of telling temp and doneness based on the cooking process and knowing your tools.

Simply microwave your raw chicken cuts on high for 2 minutes before cooking them normally. Microwave ovens cook from the inside out.
