crumb makes the bread look like it got a 24-hour ferment, black bits imply good oven and presumably a nice cook on the bottom

So you've never tasted it. Why are you eager to assume it sucks? Apparently the sauce and dough are so amazing that the simplicity doesn't hurt it at all. If you add great cheese to that and good ovens and everything is top notch how can you go wrong? You don't know shit from wherever you are not in NYC and not having tried the pizza. I've had plenty of "NY style" pizza around the country and it's always been really good. They say there's something in the water that makes actual NYC pizza even better. I can't wait to visit there and try some. And I'm eager to go to Chicago for the deep dish too. Traditional local foods done well are some of the best things on offer.
