I love "house special" lo mein that has beef, chicken, pork, and shrimp. Next time I order it I am going to ask them to make it spicy. I bet spicy lo mein would be tasty af.

So for scrambled eggs in noodle dishes, I've heard a few ideas:
>Scramble the eggs separately and then add them
>Scramble them in the pan after the meat is finished (pulling the meat to one side so the eggs can be scrambled)
>Scramble them in the pan after the noodles are added (pulling everything but the eggs to the side and then scrambling them)
I like the second two and find them indistinguishable from each other. How do you guys do it? I know the texture is different between versions, and I expect some people don't like the egg being mixed in while "wet".

Unlike a lot of chinese dishes, it's stupidly easy to make authentic lo mein at home and unlike a lot of chinese dishes, it's just as good or better made ahead of time. There are plenty of dishes that are annoying to do yourself but this isn't one of them.
