The last time we went to a family restaurant, the staff was all ex cons and the waitress argued with my wife when they served shitty coffee.
We mostly eat home cooked food now. Service is so rude even at the good places now and everything is so expensive. Also, there's to much fucking salt in everything. You really notice it when you have leftovers at room temperature. It's like a fucking deer bait salt lick.

But if you ever get the chance to try silken beef, I can't recommend that shit enough. It's basically a spicy beef bratwurst on a fucking sword and shoved into a fire pit for a few minutes. It comes out all charred and delicious and many places that make it have the pit in full view of the diners so you can watch them mould the meat onto the swords and shove them in there, all fresh-like

If binge watching Hell's Kitchen has taught me anything, it's that owners/operators are lazy and anxious causing them to uphold the culinary status quo. Moreover, it seems a lot of people buy an already running restaurant or copy their attempt to copy their neighbors' style.

And not for nothing, if you give two chefs of polar opposite calibers the same ingredients, they will make different dishes. It just so happens that 99% of those restaurants fucking suck and all taste the same because they have shit chefs.

This also goes for pretty much all desserts unless the restaurant has a dedicated pastry chef/kitchen. As for Indian place, idfk. The one I go to bakes naan to order and the food does indeed taste different from other Indian places so I know they're not getting packaged naan from anywhere. There's not enough demand for South Indian food here so South Indian restaurants are likely not using prepackaged stuff, either.

Gosh, why are open floorplans so common on this side of the pond? I moved here from yurp forever ago and bought my first house in 2012. Just about every one I saw was open floorplan and I hated it. I dunno what slop joints you go to, but the local chain (it IS a chain, there is like 2-3 of em driving distance for me) chinese food slop maker has a window where I can see the greasy mexican make my food. And they don't just nuke the food. They have a fucking griddle and everything and stir fry right in front of you.

Now maybe the Americana chains like Applebees, TGIF, RL, RR, OG, and others all do that crap, but I find it hard to believe all the slop restaurants make identical food because it's from some monopoly corpo delivery system.
