Theyre delicious. They made it to my country (aSEAnfag) a couple of years ago, only available in the major cities. The first wave were harder than what they were supposed to, and looked like orange tomatoes in a way. Also mildly sweet with this flesh that itched your gums when you ate it. Kinda annoying but still worth it.
These days i can buy them in my small town, and they're much closer to the Japanese version, extremely soft, very sweet

as the other anon pointed out they have to be almost falling apart ripe to be good and not astringent. although they have a very good taste here, something like a caramel/gummi sweet.
my gf many years ago brought me dried hachiya from japan, i still think its the best dried fruit ive ever eaten.
i really need to plant some trees they grow well in my area

I went foraging last weekend and got about a dozen wild American persimmons. They are pretty tasty, but they're small with a lot of seeds. I feel like they'd make good dried fruit but Idk the best way to process them for it

They can be fucking delicious or terrible, depending on how ripe they are and I've not found a reliable way to figure it out, ahead of time. It's been awhile, but they've got a mango-like consistency, inside, and it's sweet at I seem to recall it having floral notes. Sometimes, they look and smell perfect and the texture is fine and you bite into it and it tastes delicious for a moment, then the astringency of the tannins or whatever hits and it feels like all of the moisture has been sucked from your mouth.
