No, I don't use it. Fucking hate the stuff. I actually prefer the bullshit cheapo alternatives like safflower. Saffron has too strong of a flavour. It's got that sweet, grassy flavour going, sure, but also a kinda medicinal-herb-y thing, too, (not to mention the metallic aftertaste it can sometimes have; even fresh can have it but that metallic-iness only gets more pronounced as it ages and loses its floral notes).
And no, I haven't had fake saffron. It's grown where I'm from and has PDO status. My aunt even used to grow it as a side hustle at her vineyard so I can guarantee you it was real every time. I just don't like it.

I don't use it often but making saffron buns is traditional over here in the winter so I bake with it at least a few times a year

The powders are usually adulterated but if you like it, that's all that really matters. Real or not doesn't change whether or not you like what you've had.
I have tried throwing it in dishes to see if anything happens other than staining my food like tumeric without the tumeric taste. I have been unsuccessful thus far.
I have maybe $200 total worth of saffron I have no idea what to do with. Half of it was bought in the year 2000 and lost in a cupboard until recent. I managed to score a brand new tin still in the shrink earlier this year.
I have tried saffron in a rice pilaf a couple of times. I taste nothing different and only note the rice is a different color akin to tumaric's ability to stain. Maybe the Y2K saffron is too weak now, but I do enjoy making tea with it. It still smells lovely, so it can be that far gone.
My question is this, what would you do with saffron that's over 20 years old?
I don't feel right opening my new saffron without using this old stuff. I'm thinking of grinding it up and adding it to my coffee grounds every morning. Although, I presume the coffee would rape any taste of saffron.

At that point, the saffron has lost what makes it good and only retains the unpleasant qualities, if any whatsoever. Better to just use the new stuff if you're going to use it at all. But if you've used it and detect no flavour change to begin with, you've got fake or old stuff already. Saffron has a ridiculously strong flavour when fresh and real.
